This 19cm Vegetable Knife is inspired by traditional Japanese Usuba knives, popular amongst professional chefs in Japan as a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length meets the chopping board so it will go straight through the whole vegetable.
The GLOBAL® SAI collection follows in the same tradition as the GLOBAL Classic knives and are made in the same fashion by skilled Japanese craftsmen in Yoshikin's factory. An entirely new handle design incorporates an ergonomic thumb-rest to ease the cutting motion. The blades are crafted from special CROMOVA 18 SANSO material, comprising three layers of Stainless Steel.
